Enjoy one last sweet summer treat with our new bite-sized blueberry muffin recipe. This special recipe features no added oil! Source fresh, local ingredients for a one-of-a-kind end-of-summer snack. Bite-sized anything is a great way to portion control your sweet tooth cravings. We use mini muffin tins to create adorable bite-sized muffins perfect for snacking.

Each muffin contains only 70 calories, 4 grams of sugar and has 3g of protein with no grains! You can splurge a little by substituting the blueberries for dark chocolate chips. We just recommend that you use ones with little to no added sugar to keep things on the healthier side.

Bite-Sized Paleo Blueberry Muffins

Ingredients

  • 1 cup almond flour
  • 2 cups Forager® Original Nut & Seed Granola!
  • 1 teaspoon baking soda
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey
  • 2 eggs
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 375
  2. In a food processor, pulse together the almond flour, Forager® Original Nut & Seed Granola and baking soda until it becomes a fine powder. This process should take less than a minute.
  3. Add the applesauce, honey and eggs. Blend the mixture in the food processor for another 30 seconds or until the mixture is smooth and creamy
  4. Transfer the batter to a mixing bowl and fold in the blueberries
  5. Using a 2 TBS ice cream scoop, fill the greased mini cupcake tins. You should get 30 muffins
  6. Bake for 15-18 minutes or until the muffins just start to brown and the centers come out clean.
