Paleo Chocolate Chia Mug Cake

School is back in session! Ready for a flavorful, on-the-go snack? Make study sessions a breeze with our all new gluten free paleo chocolate chia mug cake. As always, our recipes are packed with grain free and tasty Forager® Original Nut & Seed Granola. We’ve substituted grains with nuts and seeds for a naturally sweetened and healthy granola!
- 1 egg
- 3 tbs brewed coffee
- 2 tbs nut butter
- 1/8 tsp baking soda
- 1/8 tsp sea salt
- 1/4 tsp vanilla extract
- 1 tbs coconut sugar
- 1 tbs chia seeds
- 2 tbs organic, fair-trade unsweetened cocoa powder
- 1 tsp coconut oil
- 1 tbs chocolate chips
- 2 tbs Forager® Original Nut & Seed Granola
In a microwave-safe coffee mug*, beat together the egg, coffee, nut butter, chia seeds, baking soda, salt and extracts until smooth
Add in the coconut sugar and cocoa powder and beat again until smooth
Cook in a microwave on high until the cake is done in the middle, about 1 minute 45 seconds. We recommend watching the microwave to ensure that the cake doesn’t come over the side of the mug. You might have to start and stop the microwave a few times to avoid an overflow.
(Optional) Melt the coconut oil and chocolate chips together and blend until smooth. Drizzle over the cake and top with a sprinkle of Forager® Chocolate Chia Granola.
* Coffee mugs range in size. Make sure you are using a larger coffee mug for this.
