With so many granola bar recipes out there today, if can often seem overwhelming to choose what flavor to go with. Everything from sweet, to savory to salty, and beyond.
While I appreciate the complexity in taste of most of these recipes, there are times when I crave something more simple. These oatmeal bars are perfect for a pure honest to goodness snack that is nothing but chewy oats, crunchy granola and sweetened with hints of cinnamon and vanilla.
They make a great grab-n-go snack that can be easily portable without any mess.
Sometimes simple and pure hits the spot and these oatmeal bars certainly do just that!
Makes 9 Squares
1.5 cups rolled oats
1 cup Purely Simple granola
1 tsp cinnamon
1 tsp chia seeds (optional)
1 tsp salt
1.5 cups almond milk
1 tsp vanilla
In a large bowl, mix all dry ingredients. In a separate bowl, mix wet ingredients. Pour wet into dry. Spray a 9 x 9 baking pan with non-stick cooking spray. Lay oat mixture into pan and press down spreading evenly. Bake for 40 minutes. Allow to cool before cutting into squares.
