Roasted Acorn Squash with Raspberry Drizzle

Thanksgiving is fast approaching and I am always looking for recipes with a healthy twist that everyone will enjoy. This recipe transforms an ordinary acorn squash into a decant dessert that you can feel good about eating. By using Forager banana maple granola in place of a traditional crumble, you can eliminate unwanted processed sugars and saturated fats but still get the sweet, crunchy affect of the crumble.

Ingredients:

1 acorn squash cut in half and inners removed

1/2 teaspoon cinnamon

1/2 cup Forager Banana Maple Granola

1/4 cup Raspberry jam with no added sugar

Directions:

Microwave the squash on high for 5-6 minutes in a glass dish face down. Preheat your broiler to high. Turn the squash face up, sprinkle with cinnamon and add 2 tbs of jam to each half. Broil for 15 minutes. Remove squash from the oven and add 1/4 cup granola to each half. Serve hot with a drizzle of melted jam for visual affect.
