Elevate your New Year’s Day brunch with these Gluten Free Champagne Granola Pancakes! This recipe is a great way to use up leftover Champagne from your New Year’s Eve celebration. The best part? They are gluten and dairy free!

This recipe is as simple and easy to make as traditional pancakes. With a few minor adjustments we made these delectable pancakes allergen friendly, so that everyone can enjoy New Year’s Day! Our Vanilla Ginger granola gives this morning stapleĀ a nice crunchy textural element that adds some pizzazz to these already spruced up pancakes.

The Strawberry Sauce uses some bubbly to add extra flavor!

Strawberry Champagne Granola Pancakes

  • Yield: 16 pancakes



  • 1 cup non-dairy milk
  • 2 eggs
  • 2 tablespoons melted coconut oil
  • 2 tablespoons coconut sugar
  • 2 teaspoons baking powder
  • 1 Pinch of salt
  • 1 tablespoon Vanilla Extract
  • 1 cup Champagne
  • 1 1/2 cups Gluten Free All Purpose Flour
  • 1/2 cup Vanilla Ginger Granola


  • 1 cup Champagne
  • 10 ounces bag of frozen strawberries
  • 1/2 cup coconut sugar


  1. Beat together the milk, eggs, coconut oil, coconut sugar, baking powder, salt and vanilla extract until frothy. While the mixer is still on, slowly add the Champagne.
  2. Fold the flour into the batter and set aside.
  3. In a saucepan, heat together the strawberries, Champagne, and coconut sugar. Bring it to a boil and let it continue to boil for 1 minute. Remove from heat and set aside.
  4. Preheat and grease a non-stick skillet. Wait until it gets really hot (2-3 minutes) before making your first pancake. Using a 1/4 measuring cup, scoop the batter onto the hot skillet. Add a pinch of granola to the top. When the pancakes start to bubble (1 minute, 30 seconds), flip them over to cook the other side (30 seconds). Each pancake will take about 2 minutes to cook.
  5. Top the pancakes with the strawberry sauce and a little extra granola... enjoy!
