Jamaican Jerk Lettuce Wraps

Lettuce wraps are the perfect alternative to a carb-heavy taco. Done right and they can provide a savory, satisfying sensation associated with its comforting counterpart. We used grilled tempeh in this recipe for its meaty, vegan, protein-packed flavor, but you can substitute any protein.
The stars of the show are definitely the Jamaican Jerk Snacks that give a much needed textural crunch and the creamy vegan mayo-based dressing blended with a dynamic Jamaican Jerk seasoning. Both provide a satisfying bite with each wrap that makes this recipe into a crowd-pleasing favorite.
1 head of butter lettuce
1 package tempeh
1 bag of Jamaican Jerk Snacks
2 ripe avocados
1 jar roasted red peppers (or a fresh red pepper), julienned
1 tbs Jamaican Jerk Seasoning
¼ cup vegan mayonnaise
2 tbs water
Cut the tempeh into 1 inch strips along the short side. Heat a grill pan on high and grill each side until the tempeh is heated through and has nice grill marks.
Clean the lettuce and separate the leaves. Using 2 lettuce leaves as the “taco” shell, fill with 1 piece of the tempeh, 1/4 of the avocado, 1 strip of red pepper, 1 tbs of Jamaican Jerk Snacks and a drizzle of the sauce.
Makes about 8 wraps.
